Hot-process pastry cream powder by Moench, made with corn starch, natural colorants, and flavorings — free from preservatives and flavor enhancers.
Easy to use and customizable (vanilla, chocolate…), it produces a full-bodied, smooth, and stable cream, ideal for professional use (éclairs, choux, flans, etc.).
Ingredients
Corn starch
Flavorings (including vanilla)
Natural colorants: annatto, riboflavin
May contain traces of: gluten, milk, egg, tree nuts, soy
Recommended dosage
Economical formula: 75?g powder + 150?g sugar + 1?L semi-skimmed milk
Refined formula: 80?g powder + 4 egg yolks + 200?g sugar + 1?L milk
Instructions for use: Mix the sugar (and yolks if used) with the powder, dilute with cold milk, add the remaining hot milk, bring to a boil and cook for 2 minutes, stirring constantly.
